Gourmet chocolate Brussels waffle

INGREDIENTS

  • 2 Milcamps Brussels waffles
  • For the milk chocolate mousse
    • 100g milk chocolate
    • 3 eggs
  • For the dark chocolate ganache
    • 110g dark chocolate
    • 110g liquid full cream
    • Salt
  • For decoration
    • Whipped cream
    • Chocolate Sprinkles
    • Piping bag

PREPARATION

FOR THE MILK CHOCOLAT MOUSSE

  1. Melt the milk chocolate in a water-bath over low heat and let it cool.
  2. Break the eggs by separating the whites, add a pinch of salt and whisk the whites until stiff.
  3. Mix the melted chocolate with the egg yolks, then gradually add the beaten egg whites.
  4. Keep in a cool place for at least 3 hours.

 

FOR THE DARK CHOCOLATE GANACHE

  1. Melt the dark chocolate in a bath-water over low heat.
  2. Bring the liquid cream to the boil in a saucepan.
  3. Gradually pour the liquid cream over the chocolate, stirring vigorously each time. The mixture should be smooth and homogeneous.
  4. Leave to cool and keep in a cool place.

 

Once your mousse and ganache are ready, you can start to garnish your waffles.

  1. Warm them in the oven for a few minutes and
    then let them cool down. Use the piping bag to arrange big spots
    of your mousse and ganache on the waffles.
  2. Add whipped cream and sprinkles for decoration.

Enjoy immediately!

Liege waffle tatin style

INGREDIENTS

  • 2 Milcamps Liege waffles
  • 4 apples
  • 10g of powdered sugar
  • Vanilla ice cream

PREPARATION

  1. Peel the apples and cut them into small pieces.
  2. Pour the sugar into a saucepan and add the apple pieces. Fry quickly to caramelize the apples, add some water and let it simmer for 10 minutes.
  3. Reheat the waffles in the oven or toaster for a few minutes and place a spoonful of your caramelized apple compote on top of the waffles.
  4. Finally, place a scoop of vanilla ice cream on top.

    Enjoy immediately !

Breaded chicken waffle burgers

INGREDIENTS

  • 4 Jacquet Galette waffles
  • 2 chicken cutlets
  • 4 tablespoons of flour
  • 2 eggs
  • 1 bowl of breadcrumbs
  • 1 tomato
  • 2 iceberg lettuce leaves
  • Sauce
  • Salt, pepper, olive oil

  • 15 Min.
  • For 2 persons

PREPARATION

  1. To start, prepare the flour, beaten eggs and breadcrumbs in 3 different soup plates. Dip the chicken cutlets in the flour, then dip them in the eggs and breadcrumbs.
  2. Then fry the breaded cutlets in a frying pan with olive oil. Leave them to brown over a low heat for 5 minutes.
  3. In the meantime, spread the sauce of your choice on a galette waffle, then add a lettuce leaf, one or two slices of tomato and finish with a breaded escalope.
  4. Close the burgers with another galette waffle and enjoy immediately!
  5. Tip: Serve these burgers with sweet potato fries!

Nordic Waffle

INGREDIENTS

  • 1 Brussels Waffle Milcamps
  • 2 slices of smoked salmon
  • 1 cucumber
  • Some radishes
  • White cheese
  • Fresh chives
  • A squeeze of lemon juice

PREPARATION

  1. Reheat the waffle in the oven, toaster or waffle iron.
  2. Cut the slices of smoked salmon in rectangles and sprinkle with lemon juice.
  3. Wash the chives, cucumber and radishes. Thinly slice the chives and cut the cucumber and radishes into thin slices.
  4. Place the waffle on a plate and garnish with fresh cheese and salmon. Then add the cucumber and radish slices and the chives.
  5. Enjoy immediately with a salad !

Dream Waffle

  • Some candied cherries
  • 4 bars of chocolate
  • 4 tablespoons of milk
  • Whipped cream

PREPARATION

  1. Heat the waffle in the oven, toaster or waffle iron.
  2. Put the bars of chocolate and 4 tablespoons of milk (or water) in a pan and melt over low heat. Mix well.
  3. Place a few candied cherries on the waffles. Drizzle with melted chocolate and top with whipped cream.
  4. Serve immediately.
